If you’re on the hunt for a simple yet irresistible gussied-up brown sugar cookie recipe, look no further. Imagine biting into a warm, chewy cookie that perfectly balances rich miniature semi-sweet chocolate chips with the crunchy texture of unsweetened shredded coconut and the tart zing of dried cherries. Whether you’re baking cookies for the holidays or simply craving a sweet treat, this recipe is sure to become a cherished favorite.
While there’s nothing quite like the comforting taste of a warm, gooey, buttery homemade chocolate chip cookie, I will admit to feeling bored with chocolate chip cookies on occasion. And trust me when I say this, no one needs a bored Colleen because that’s when all of my out-of-hand Amazon shopping seems to become most problematic. All too often, I sadly find myself spending way too many hours scrolling through Amazon and casually willy-nilly adding things to my cart without any real thought as to whether or not I really need them. I mean, seriously y’all, how many garden flags does one person really need?
Instead of hitting the add to cart button on that Spaceship Santa-Themed Garden Flag, it’s a whole easier on my budget if I simply avoid that chocolate chip cookie boredom by throwing a few extra ingredients into my cookie dough to create a soft chewy chocolate-studded cookie with lots of added texture instead. With these brown sugar chocolate chip cookies, you’ll get a lovely tropical crunch from the unsweetened shredded coconut and a tart chewiness from the sweetened dried cherries. It’s almost enough cookie excitement to keep this girl from spending a small fortune on three new holiday garden flags that she really doesn’t need. Almost.
Ingredients:
- 1/2 Cup Unsalted Butter, Softened
- 1 Cup Light Brown Sugar, Packed
- 1 Egg
- 2 Teaspoons Vanilla
- 1/2 Teaspoon Baking Soda
- 1/4 Teaspoon Kosher Salt
- 1 1/2 Cups All-Purpose Flour
- 1/2 Cup Unsweetened Shredded Coconut (Additional for Garnish)
- 1/2 Cup Miniature Semi-Sweet Chocolate Chips (Additional for Garnish)
- 1/2 Cup Dried Sweetened Cherries, Very Finely Chopped
Directions:
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream the butter and brown sugar together for 3 minutes on medium speed.
- Add the egg; mix for 30 seconds on medium speed.
- Add the vanilla; mix for 30 seconds on medium speed.
- Add the baking soda and salt; mix for 30 seconds on medium speed. Slowly add the flour 1/2 cup at a time on low speed. Mix until just combined.
- Add the shredded coconut, miniature chocolate chips, and finely chopped cherries. Use a silicone spatula to stir them evenly into the cookie dough.
- Add some unsweetened shredded coconut to a small bowl. Use a cookie scoop or tablespoon to scoop the cookie dough out. Lightly roll each scoop of cookie dough in the coconut to coat. Place each one onto a Silpat or parchment paper-lined baking sheet.
- Bake for 12 minutes.
- When you remove the cookies from the oven, immediately place a few miniature semi-sweet chocolate chips on the top of each cookie. Use your fingers to press them down lightly into each cookie.
Suggestions:
- Make sure to use unsweetened shredded coconut in this recipe and not sweetened coconut. The sweetened coconut will make these cookies way too sweet. Notice that I don’t state how much coconut you should place into the small bowl you will need to coat each cookie with coconut. Start with 1/2 cup and add more as needed.
- These cookies will be puffed up and just starting to crack a bit on top when they are done baking. They will deflate as they cool, creating a soft and chewy cookie. If you overbake the cookies they will be dry and crispier.
- Gently pressing additional miniature chocolate chips into the tops of the cookies after you remove them from the oven, helps to give them a bumpy and more desirable appearance.
- Allow the cookies to rest for 5 minutes before removing them to a baking rack to finish cooling completely.
- This recipe will yield approximately 2 dozen cookies. It’s an easy recipe to double if you so desire.
Improvements:
- Replace the miniature semi-sweet chocolate chips in this recipe with milk chocolate, dark chocolate, or white chocolate chips or chunks.
- Fold chopped pecans, walnuts, or almonds into the cookie dough.
- Replace 1 teaspoon of the vanilla in this recipe with almond or coconut extract.
