Packed with freshly grated cheddar cheese and a zesty, slightly spicy, homemade taco seasoning, this cheesy taco-seasoned dip is the perfect companion to your favorite crunchy corn chips. Whether you’re hosting a party, settling in to watch the big game, or simply craving a delicious treat, this corn chip dip is sure to please.
While recently attending a party, I was pleased to see a bowl of creamy dip as a snack option. Sadly, the pleasure didn’t last long. After one bite of that dip, I was instantly saddened. It was bland, boring, and tasteless, almost to the point that I pondered if the dip was straight-up sour cream with zero seasoning. Was this a cruel joke? Had one of my friends lost their tastebuds? Or perhaps, it had just been way too long since I’d had a run-in with a bowl of dip. Maybe colorless dips with zero flavor are now on trend? With this snack party failure incident in mind, I decided to create my very own bowl of dip. One with lots of cheesy flavor and seasonings. A dip with a zesty zip, a spicy tang, and an in-your-face savory swagger. A dip that tastes of way more than just plain ol’ sour cream. Y’all, there are enough boring things in this world; corn chip dip shouldn’t be one of them.
Ingredients:
- 1 Cup Sour Cream
- 1/2 Cup Mayonnaise
- 1 Tablespoon Chili Powder
- 1 Teaspoon Dried Oregano
- 3/4 Teaspoon Ground Cumin
- 1/2 Teaspoon Paprika (Additional for Garnish)
- 1/4 Teaspoon Crushed Red Pepper Flakes
- 1/4 Teaspoon Finely Ground Sea Salt (Optional)
- 1/4 Teaspoon Onion Powder
- 1/4 Teaspoon Garlic Powder
- 1/4 Teaspoon Finely Ground Black Pepper
- 4-oz. Mild Cheddar Cheese, Freshly Grated (Divided)
- 4 Scallions, Chopped (Divided)
Directions:
- Whisk the sour cream, mayonnaise, and seasonings in a medium-sized bowl until smooth.
- Add the grated cheddar cheese to the sour cream and mayonnaise mixture, reserving a tablespoon or two for garnish. Stir well to combine.
- Add 3/4 of the chopped scallions to the sour cream and mayonnaise mixture. Stir well to combine.
- Spoon or spread the dip into a serving bowl.
- Garnish the dip with a sprinkle of additional paprika, followed by the remaining grated cheddar cheese and chopped scallions.
- Serve with corn chips.
Suggestions:
- Corn chips are pretty salty, so I chose to only use a little bit of salt in this corn chip dip. You can always add more salt if you feel like this dip needs it, or even leave it out altogether.
- I used a microplane fine cheese grater to grate the cheddar cheese for this recipe, however, you could also use a traditional cheese grater for added texture.
- You can use the white and green part of each scallion for this recipe, or just use the green for a milder oniony flavor.
- This dip can be enjoyed right away, however, it will taste its best after the flavors have a chance to marry for an hour or two. Tightly cover the serving bowl with plastic wrap and refrigerate the dip until serving.
Improvements:
- Serve this dip with sliced cucumbers, carrot sticks, halved radishes, sugar snap peas, or celery sticks.
- Add corn kernels to this dip. You can either use drained canned corn or thawed frozen corn.
- Fold finely chopped sun-dried tomatoes or rinsed and drained pimentos into this cheesy dip.
- Use this dip as a sandwich spread for your favorite wraps and/or subs.
