By using a cake mix, you can quickly and deliciously make flavorful cookies using only six ingredients. Get ready to celebrate good times with these vanilla cake mix cookies.
One more week till St. Patrick’s Day; let the celebration begin! These cookies are my recipe entry for the third week of the SOLO Simple But Good Recipe Contest, under the theme “Celebrations.” Once again, I’ve managed to come up with a recipe using only six ingredients, not such an easy thing to do when you’re making a cookie. Using a cake mix helped out a lot, and gave the cookies a completely different texture than most of the cookies I make. These cookies are crazy fast and simple to whip up, I think I spent more time waiting for the oven to preheat than anything.
(You might be wondering what these cookies have to do with St. Patrick’s Day. I’ll give you a hint, think rainbows. I’ll be doing a “project ” with them later on this week.)
Ingredients:
- 2 Eggs
- 1/4 Teaspoon Instant Espresso Coffee
- 1 Tablespoon Vanilla
- 1 (15.25-oz.) Box French Vanilla Cake Mix
- 1/2 Cup Melted Unsalted Butter
- 1 (12-oz.) Bag Milk Chocolate M&M’s Minis
Directions:
- Preheat oven to 350 degrees.
- Mix eggs, instant espresso, and vanilla on low speed for 30 seconds.
- Add cake mix, then melted butter; mix on low speed just until everything is incorporated.
- Stir M&M’s into the dough with a spatula.
- Allow cookie dough to rest for 5 minutes.
- Using a cookie scoop or tablespoon, drop dough onto a Silpat or parchment paper-lined cookie sheet.
- Bake for 9 to 10 minutes, or until the tops just start to turn golden brown.
- Remove the cookies from the oven and let them rest on the cookie sheet for 3 minutes.
- Move cookies to a cooling rack to finish cooling completely.
Suggestions:
- The dough will become thicker, and easier to scoop after you allow it to rest for 5 minutes.
- Store in an airtight container.
Improvements:
- Use a chocolate cake mix.
- Use Milk Chocolate Peanut M&M’s.
