<p>Pork tenderloin; I hate it, I love it. Y&#8217;all, if I&#8217;m being totally sincere, it&#8217;s one heck of a love/hate relationship. I love it, of course, because it&#8217;s pork. And, woo-hoo zip-a-dee-doo-dah for pork. I mean, come on, who doesn&#8217;t love pork?</p>
<p>Now for the hate, y&#8217;all. I hate it because it&#8217;s so hard to make it flavorful and juicy. You know what I&#8217;m talking about it. More often than not, I bet you we all eat dry, flavorless pork and just suck it up.</p>
<p>No longer. Seriously, even I was pretty shocked at just how amazing these pork tenderloins turned out. And, I&#8217;ll even be totally upfront and honest by admitting to cooking them longer than the USDA suggested 145 degrees.</p>
<p>That&#8217;s right, I said it, I&#8217;m just not a huge fan of overly-squishy pork. Sure, I don&#8217;t want it to be dry as sawdust, however, I have no great desire for it to feel like I&#8217;m eating a leech either.</p>
<p>Back to the point of this recipe. Finally, yes finally, you can have your pork and eat it too. Without the use of a chain saw to cut it or three beers to wash it down. However, if you want to enjoy this tender, juicy, flavorful pork tenderloin with beer, who am I to stop you?</p>

<p><strong>Directions:</strong></p>
<ol>
<li>Preheat oven to 400 degrees.</li>
<li>Line a baking sheet with foil, add then lightly coat it with a bit of olive oil to prevent the pork from sticking.</li>
<li>Place the tenderloins on the baking sheet, fat side facing up.</li>
<li>In a small bowl, whisk together the 2-tablespoons olive oil, balsamic vinegar, salt, pepper, onion powder, garlic powder, paprika, and dry mustard.</li>
<li>Liberally coat all sides of the pork tenderloins with the seasoning paste.</li>
<li>Bake for 10 minutes and then decrease the heat to 350 degrees.</li>
<li>Continue baking until the meat reaches 145 degrees. This should take an additional 20 to 30 minutes. Definitely use a meat thermometer to aid in deciding when to remove the pork from the oven.</li>
<li>Remove the tenderloins from the oven, cover them with foil, and allow them to rest for at least 10 to 15 minutes before slicing.</li>
<li>Drizzle any pan drippings over the sliced pork before serving.</li>

<p><strong>Suggestions:</strong></p>
<ul>
<li>Pork tenderloins are usually sold two to a package.</li>
<li>A tablespoon of salt seems like quite a bit, however, in my opinion, it works perfectly for this recipe.</li>
<li>The USDA suggested that pork be cooked until an internal temperature of 145 degrees is reached. That being said, everyone likes their pork cooked a little bit differently. I prefer mine cooked more. My tenderloins actually reached 180 degrees before I removed them from the oven, however, they were still extremely tender and juicy. I definitely suggest using a thermometer for this recipe to help aid you in making your decision of when to remove the pork tenderloins from the oven.</li>
<li>My pork tenderloins were two different sizes. Since one was much larger than the other one, I removed the smaller tenderloin from the oven about five minutes before the larger one.</li>
<li>Only slice the meat you plan on serving. If you intend to only serve one pork tenderloin at a time, I suggest you refrigerate the remaining one unsliced. This will help keep the meat juicy and prevent it from drying out.</li>

</li><li id="yrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Continue baking until the meat reaches 145 degrees. This should take an additional 20 to 30 minutes. Definitely use a meat thermometer to aid in deciding when to remove the pork from the oven.

Sometimes, veggies are just that; sexy as fuck. So, does thinking that make me weird? Because if so, I sure as heck don&#8217;t want to be considered normal. As far as I&#8217;m concerned, having seriously lusty thoughts about cabbage totally wins out over having to eat that Baked Feta Pasta crap that seems to be all the rage right now.</p>
<p>So, let&#8217;s chat a bit about this here sexy cabbage. It&#8217;s oven-roasted, which makes it tender and crisp at the same time. And, the Irish butter gives it a lovely, rich, buttery taste, with just the right hint of salt. Y&#8217;all, I&#8217;m definitely not afraid to admit that this is some seriously sexy cabbage. <p><strong>Directions:</strong></p>
<ol>
<li>Preheat oven to 425 degrees.</li>
<li>Peel any damaged outer leaves off of the cabbage that you feel aren&#8217;t worthy of eating.</li>
<li>Rinse the cabbage under cold water.</li>
<li>Cut the cabbage into quarters and then cut the white core out of each quarter and discard it. Roughly chop the cabbage into 1-inch pieces.</li>
<li>Place the chopped cabbage onto a baking sheet. Sprinkle the parsley, pepper, and nutmeg evenly over the chopped cabbage. Evenly distribute pats of Irish butter over the seasoned cabbage.</li>
<li>Roast for 30 to 40 minutes, stirring every 10 minutes.</li>

<p><strong>Suggestions:</strong></p>
<ul>
<li>Can you use normal butter for this recipe? Sure you can. However, Irish butter has a slightly higher butterfat content, which makes it taste so much better. Irish butter is available at almost every market and the splurge is definitely worth it.</li>
<li>Freshly grated nutmeg is far better than pre-ground store-bought nutmeg. However, you can use ground nutmeg if it is all that you have on hand. Nutmeg adds a lovely flavor to this cabbage.</li>
<li>I roasted this cabbage for 40 minutes because I like some of the cabbage leaves to become brown and crispy. The crispy bits add great texture. If you prefer, you can choose to roast the cabbage for less time.</li>
<li>I used Salted Irish Butter for this recipe, so I did not add any extra salt to this cabbage before or after roasting it. If you use unsalted butter or feel that this cabbage needs more salt, just add salt to taste.</li>

<p>I&#8217;m not super-patient when it comes to slicing things into neat, little, exact, precise slices. It&#8217;s just not my thing. In fact, when it comes to wielding a knife, I&#8217;m pretty much a rebellious soul. Honestly, I&#8217;m a throw it onto the cutting board, don&#8217;t hold the fingers back, let me at, kind of slicer. That&#8217;s why it&#8217;s really rather amazing that I haven&#8217;t managed to chop off a finger yet in my kitchen-slicing endeavors. Knock on wood.</p>
<p>So, you can see from my above-mentioned slicing style, that making anything Hasselback-style, might be a little daunting. Would it really be worthwhile? Well, at first glance, when I pulled these butter, maple syrup, brown sugar, and chipotle-slathered butternut squash out of the oven, my answer would definitely have been a big ol&#8217; giant fat no. They looked pretty gosh darn sad and wilty, and definitely not worth the exerted slicing effort.</p>
<p>Then something rather amusing happened after I carefully tried to slide each butternut squash half onto a serving plate without too much disarray. The butternut squash smiled at me. Y&#8217;all, seriously, just look at the pictures. I do believe that butternut squash is just about the happiest vegetable on the planet, don&#8217;t you? Must be all that butter, maple syrup, brown sugar, and chipotle. I mean, really, who wouldn&#8217;t want to be slathered in that?</p>

<p><strong>Directions:</strong></p>
<ol>
<li>Preheat oven to 400 degrees.</li>
<li>Slice the squash in half lengthwise, scoop out the seeds with a spoon, and then peel both halves of the butternut squash.</li>
<li>On a sheet pan, drizzle each half of the butternut squash with 1 tablespoon of olive oil. Use your hands to work the oil into the squash. Place each butternut squash cut-side down and then sprinkle with sea salt.</li>
<li>Bake for 20 minutes.</li>
<li>Allow the butternut squash to cool for 15 minutes.</li>
<li>Place two butter knives or chopsticks lengthwise on each side of one butternut squash half. Use a sharp knife to cut slits in the butternut squash every 1/8 of an inch. Repeat with the remaining butternut squash half.</li>
<li>In a small bowl, whisk together the butter, maple syrup, brown sugar, and chipotle. Brush the mixture liberally onto each butternut squash half.</li>
<li>Bake for another 10 to 15 minutes, or until tender.</li>

<li>Placing two butter knives or chopsticks lengthwise alongside each butternut squash half helps to ensure that you don&#8217;t cut too far down into the butternut squash.</li>
<li>The baking time may vary depending on how big or small your butternut squash is; mine was medium-sized.</li>
<li>I prefer my squash to be on the non-mushy side, so I only baked it for 30 minutes in total. If you like softer butternut squash, I suggest baking it for another 10 minutes after you slice it, brushing it with the maple and butter mixture, and then baking it for yet another 10 minutes.</li>
<li>Make sure to check on the squash often after you brush it with the maple butter mixture and return it to the oven; you don&#8217;t want it to burn. I suggest checking on it after 8 minutes, and then every 2 minutes after that.</li>
<li>Each butternut squash half will easily feed 2 people, which means you will get 4 servings from each butternut squash.</li>

Use a sharp knife to cut slits in the butternut squash every 1/8 of an inch. Repeat with the remaining butternut squash half.

<p>Breakfast for dinner, is there really anything better? I think not. It&#8217;s pretty much the best weeknight meal ever. When B.O.B. Bob and I are considering eating pretzels for dinner at 10:00 at night, this is definitely the kind of meal we pretty much survive on. And, if it means only having to clean a few dishes, I&#8217;m even happier. There&#8217;s nothing worse than doing a bunch of dirty dishes at midnight unless, of course, it&#8217;s cleaning up a bunch of dirty dishes early in the morning, which were left sitting in the sink to get nice and crusty all night.</p>
<p>Thanks to sheet pan dinners, or in this case, sheet pan breakfasts, getting dinner on the table quickly is no longer a problem. In this recipe, refrigerated hash browns are first browned to perfection and then mixed with a special southern sauce made using apricot preserves, apple jelly, horseradish, mustard, and a few seasonings, before being topped with eggs and cooked for another few minutes. Add on an extra sprinkle of black pepper and freshly chopped scallions, and dinner, or breakfast, is served. No pretzels for dinner tonight.</p>

<p><strong>Directions:</strong></p>
<ol>
<li>Preheat oven to 400 degrees.</li>
<li>Place the hash browns on a sheet pan, drizzle them with the 3 tablespoons of olive oil, and then sprinkle them with 1/2 teaspoon of both salt and pepper. Toss to combine.</li>
<li>Bake for 20 to 25 minutes, or until browned.</li>
<li>In a small bowl, whisk together the preserves, jelly, horseradish, mustard, garlic powder, and onion powder.</li>
<li>Pour the mixture over the hash browns, add the ham, and then toss to combine.</li>
<li>Move the hash browns aside to create four wells. Drizzle a little bit of olive oil in each well and then add an egg into each one.</li>
<li>Bake for 5 to 10 minutes, or until the eggs are done to your preference.</li>
<li>Garnish with scallions and additional black pepper.</li>
<li>Serve immediately.</li>

<p><strong>Suggestions:</strong></p>
<ul>
<li>You want the hash browns to be crispy. They will eventually soften a little bit again after adding the sauce.</li>
<li>You can use whichever type or brand of ham in this recipe that you prefer, I used Frick&#8217;s Applewood Quarter Ham, Sliced. The amount of salt you use in this recipe may vary depending on the saltiness of the ham which you use.</li>
<li>The eggs will cook rather quickly in the oven, so make sure to keep an eye on them.</li>
<li>Remove the eggs from the sheet pan as soon as you take them out of the oven or they will continue to cook and become hard and rubbery.</li>
</ul>
